With a sticky and sleek appearance, it is very deeply coloured, almost black, with a brown undertone. It has a very particular smell of plants, baked fruits and fig jam. The flavour reminds dry apricots and caramel. It is persistent in the mouth and it may be characterized by a salty and acid note.
It pairs well with sweet and non seasoned cheese. It is perfect for making pancakes or with infusions and black tea. If heated in bain-marie up to 40° it may be served as a dessert on top of fresh ricotta.
